My client is seeking an experienced Assistant General Manager with a strong F&B focus to join their established entertainment and casino destination in Montego Bay, Jamaica.
Combining casino gaming, dining, live entertainment, and family-friendly attractions, this is a dynamic operation offering a unique blend of hospitality and entertainment. The venue features a restaurant alongside the gaming floor, a dedicated stage and live entertainment space, and a family-focused concept with a children's restaurant and interactive gaming area.
This role is particularly suited to an experienced F&B operator who understands the demands of a busy restaurant environment and can help elevate the overall food offering. With a strong focus on menu development, food quality, service standards, and commercial performance, you'll play a key role in enhancing the guest experience and driving the continued success of the business.
Key Responsibilities- Oversee the day-to-day food and beverage operations, ensuring exceptional food quality, service standards, and guest satisfaction.
- Work closely with the General Manager to drive operational performance and support the overall success of the venue.
- Help elevate the restaurant's food offering through menu improvements, innovative concepts, and a continued focus on quality and consistency.
- Lead, develop, and motivate a team of approximately 40–50 employees across relevant operational areas.
- Ensure efficient restaurant operations, including staffing, scheduling, inventory management, purchasing, and cost control.
- Monitor food costs, labour expenses, and overall departmental performance to maximise profitability.
- Maintain high standards of food safety, hygiene, cleanliness, and regulatory compliance.
- Collaborate with the culinary team to improve menu execution, presentation, and the overall dining experience.
- Ensure the restaurant operates seamlessly alongside the casino, entertainment, and wider guest-facing operations.
- Support the delivery of live entertainment, events, and promotional activities that enhance the venue's appeal.
- Identify opportunities to increase restaurant revenue, improve operational efficiency, and encourage repeat business.
- Foster a positive, accountable team culture while maintaining a hands-on approach to leadership.
- Proven experience as an Assistant General Manager, F&B Manager, Restaurant General Manager, or similar senior hospitality leader.
- A strong food and beverage background, ideally with substantial experience overseeing restaurant operations.
- A genuine passion for food, menu development, and elevating culinary standards.
- Experience within a high-volume restaurant, hotel, resort, entertainment venue, or casino environment.
- A combination of hospitality and casino or entertainment experience would be a significant advantage.
- Strong commercial awareness, including food cost management, labour control, budgeting, and revenue generation.
- Proven experience leading, developing, and managing sizeable teams.
- A hands-on leadership style, with the ability to balance strategic oversight with involvement in daily operations.
- Excellent communication, organisational, and problem-solving skills.
- The ability to thrive in a fast-paced, multifaceted environment where dining, gaming, and entertainment come together.
- A proactive mindset and the ability to identify opportunities to improve both the guest experience and business performance.
