We are seeking an experienced Executive Sushi Chef to lead sushi operations within a high-end dining environment. This is an exciting opportunity for a talented culinary leader with exceptional sushi skills, a passion for Japanese cuisine, and a strong track record of delivering outstanding food quality and guest experiences.
The Role-
Lead all sushi kitchen operations, ensuring exceptional quality, consistency, presentation and efficiency.

Oversee sushi, sashimi, cold dishes and omakase offerings, with a focus on premium seafood and seasonal menu innovation.

Manage inventory, purchasing, food costs, labour and waste control.

Recruit, train and develop the sushi team, maintaining high standards of performance and professionalism.

Ensure strict compliance with food safety, seafood handling and sanitation requirements.

Work closely with restaurant leadership on menu development, VIP experiences, special events and continuous operational improvements.

Maintain a clean, organised and efficient sushi kitchen while ensuring all equipment and workstations meet the highest standards.

Extensive experience in high-end sushi restaurants, ideally at Executive Sushi Chef, Head Sushi Chef or a senior leadership level.

Exceptional knife skills and expertise in sushi, sashimi, Japanese seafood and traditional preparation techniques.

Strong knowledge of premium fish sourcing, product quality, inventory management and food cost control.

Proven ability to lead, train and develop a high-performing culinary team.

A passion for guest engagement, including omakase experiences and personalised service.

Strong organisational, communication and leadership skills.

A hands-on approach, with the ability to thrive in a fast-paced, high-pressure environment.

Flexibility to work evenings, weekends, holidays and varying shifts as required.
